  • Taste: Bland or slightly coconut flavor for refined oil; distinct coconut flavor for virgin oil.  
  • Fatty Acid Profile: High in lauric acid, typically around 45-55%.  
  • Melting Point: Typically between 23-27°C.
  • Free Fatty Acids (FFA): Lower FFA content indicates higher quality.  
  • Peroxide Value: Measures oxidative rancidity; lower values are better.  
  • Iodine Value: Indicates the degree of unsaturation; typically low in coconut oil.  
  • Saponification Value: Measures the amount of alkali needed to saponify the oil.  
  • Moisture and Impurities: Low levels are desirable.
